Looking for a moist, delicious cake that pairs PERFECTLY with coffee? Introducing this STREUSEL COFFEE CAKE. As if one layer of nutty streusel wasn’t enough, there is a surprise layer ribboned in the middle for ultimate struesel goodness.
So what is streusel you may ask? According to Wikepedia, is a German word meaning “something scattered or sprinkled;” a crumbly topping of flour, butter, and sugar that is baked on top of muffins, breads, pies, and cakes. For this coffee cake, instead of using the traditional flour, butter and sugar of a streusel, I swapped almond flour, coconut oil and coconut sugar for a grain free and refined sugar free twist. Let me tell you, the results are DELICIOUS!
And it’s easy to make too! No mixer required – all you need are three bowls, a spoon and a loaf pan.
After one slice, my husband already requested for me to make this for our families when we come home for the holidays. I will gladly oblige 🙂

Streusel Coffee Cake
Ingredients
- Wet Ingredients
- 1 cup unsweetened apple sauce
- 3 eggs at room temperature
- 1/4 cup maple syrup
- Dry Ingredients
- 1/2 cup coconut flour
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- Streusel Topping
- 1/2 cup almond flour
- 3 TB coconut sugar
- 3 TB softened coconut oil or butter
- 1 tsp cinnamon
- 1/4 cup pecans, chopped
Instructions
- Preheat oven to 350. Spray a loaf pan and line with parchment paper.
- In a large bowl, use a spoon to thoroughly combine all wet ingredients.
- In another bowl, whisk together all dry ingredients.
- Add dry to wet and mix.
- In another bowl, combine all streusel ingredients except pecans until a fine crumb forms. Then stir in pecans.
- Pour half of batter into prepared pan, sprinkle on half of streusel topping. Pour remaining batter into pan, add remaining steusel topping.
- Bake for 45 minutes. Let cool before slicing.
