5 ingredients, 1 bowl, 1 spoon and you are set! These pumpkin spice no bake cookies are the perfect quick and easy fall treat. Beware – they may disappear quickly! 🙂
Ingredients
- 2 cups oat flour (blend oats in a blender)
- 2/3 cup canned pumpkin
- 1/2 cup coconut sugar
- 2 TB coconut oil
- 2 tsp cinnamon
Instructions
- Mix all ingredients in a large bowl until until thoroughly combined. (I ended up using my hands!)
- Roll dough into 10 balls.
- Place on a plate lined with parchment paper. Wet the tines of a fork with a bit of water. Press a criss-cross pattern into cookies.
- Refrigerate for 1 hour or until firm.
- Store in fridge or freezer. Enjoy!
