If you know me, you know I love homemade granola. I can’t believe it took me so long to get around to making granola bars. These will be a staple for sure!
No need to buy commercial granola bars loaded with sugar and preservatives when it is so easy to make your own at home.
I baked the oats, coconut flakes and almonds first to get them nice and toasty. Then mix the wet ingredients, add the oat mixture and you are on your way!
The chocolate drizzle is optional but encouraged 🙂

Ingredients
- 1.5 cup old fashioned oats
- 1 cup unsweetened coconut flakes
- 1 cup raw almonds, roughly chopped
- 1/3 cup creamy peanut butter
- 1/3 cup maple syrup
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat oven to 350. On a baking sheet, add oats, coconut and almonds in an even layer. Bake for 10 minutes, or until lightly browned.
- In a large bowl, combine remaining ingredients except chocolate chips. Add oat mixture and stir till evenly coated.
- Line an 8×8 inch pan with parchment paper. Push mixture firmly into pan (I rubbed a spatula with coconut oil so it didn’t stick and used it to push the mixture down).
- Freeze pan 20 minutes to harden. Remove bars from pan and cut into 10 bars.
- If desired, melt chocolate chips and drizzle chocolate over each bar.
