Looking for a moist, delicious vanilla cake that is perfect for any occasion? I have you covered!
The base starts with eggs, full fat coconut milk, maple syrup and vanilla. You don’t even need a mixer; everything comes together in a bowl. Then you combine almond and coconut flour and mix it all together. For the chocolate, I used Trader Joe’s brand chocolate chunks, but any chocolate chips or chunks would be great.

Ingredients
- 3 eggs, at room temperature
- 1/3 cup pure maple syrup
- 1/3 cup full fat coconut milk
- 2 TB avocado oil (or melted coconut oil)
- 1 tsp vanilla extract
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/3 cup chocolate chunks
Instructions
- Preheat oven to 350. Line a 9×5 inch loaf pan with parchment paper, spray with coconut oil spray.
- In a small bowl, combine egg, maple syrup, milk, oil and vanilla.
- In another bowl, whisk together almond flour, coconut flour, baking soda and salt.
- Add dry ingredients to wet and stir.
- Stir in chocolate chunks.
- Pour batter into prepared pan. Sprinkle with more chocolate chunks on top if desired.
- Bake for 30 minutes. Let cool in pan on wire rack.
