Chocolate Chip Zucchini Bread Muffins

Ingredients
- 1/2 cup mashed banana (1 large)
- 1 cup shredded zucchini (measured after water is squeezed out)
- 2 eggs, at room temperature
- 1/4 cup coconut sugar
- 1 TB avocado oil
- 1 cup almond flour
- 2 TB coconut flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chocolate chips
Instructions
- Preheat oven to 350.
- In a large bowl, combine banana, zucchini, egg, coconut sugar and oil.
- In another bowl, whisk together almond flour, coconut flour, baking soda, cinnamon and salt.
- Add dry to wet and stir to combine. Stir in chocolate chips.
- Spray 9 muffin cups with coconut oil spray (I used silicone cups). Divide batter between cups. Sprinkle more chocolate chips on top.
- Bake for 25 minutes or until a toothpick comes out clean.
- Let cool on wire rack.
