No bake on a warm summer night? Yes please!
These thin mint brownies are made of super simple ingredients and are seriously addicting. All you need is a food processor to make them…and a bit of patience for them to set. 🙂
I whipped these up one night after dinner when I needed something sweet. Ya know what I mean? These did the trick! Ready in under 30 minutes and so delicious.

You can easily halve this recipe and make it in a 9×5 inch loaf pan!
Ingredients
- 2 cups Medjool dates, pitted and packed
- 2 cups raw walnuts
- 1/2 cup cacao powder
- 1/2 tsp peppermint flavor
- Dash of salt
- Optional: 1/4 cup coconut butter
Instructions
- In a food processor combine all ingredients. Blend until completely homogenous (mine took 3-4 minutes).
- Line a 8×8 inch baking pan with parchment paper. Push mixture firmly into pan in an even layer.
- Freeze 30 minutes to set.
- For frosting, heat coconut butter for 30 seconds in the microwavee and combine with another 1/4 tsp peppermint flavor. Drizzle over brownies.
- Remove brownies from pan. Cut into 16 squares with a sharp knife.
- Store leftovers in the fridge.
