As much as I LOVE granola made of mostly oats, I have to say, this Nutty Grain Free Granola steals the show. It’s nutty, crunchy, sweet and just delicious.
I buy huge bags of nuts from Costco, and store them in the fridge to keep them fresh. As long as your nuts are raw (as opposed to roasted and/or salted), you are good to go!
My favorite ways to eat this granola you ask? Over oatmeal, smoothies, or fruit and yogurt bowls like the one pictured here. My absolute favorite though? Out of my hand as a snack on its own!

Nutty Grain Free Granola

Ingredients
- 1.5 cups chopped raw nuts (I used a mix of walnuts, cashews and pecans)
- 1/2 cup unsweetened coconut flakes
- 1 tsp cinnamon
- 2 TB melted coconut oil
- 2 TB maple syrup
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350.
- In a large bowl, combine nuts, coconut flakes and cinnamon.
- In a small bowl, combine cinnamon, coconut oil, maple syrup and vanilla.
- Pour wet over dry and toss to combine.
- Line a baking sheet with parchment paper. Spread mixture in an even layer.
- Bake at 350 for 15 minutes, or until coconut flakes are lightly browned.
- Let cool completely. Store in an airtight container for up to a month.
