In a sea of pumpkin baked goods, how about some easy no bake bars to add to the mix?
All you need is a food processor, a loaf pan, and a freezer to let them set up and voila! Your no bake bars are ready in no time.
These bars use simple ingredients and Medjool dates to sweeten – no added sugar here! I love using melted coconut butter as a quick and easy frosting, but feel free to omit if you’d like.
These bars are a perfect fall snack or dessert. Great for packing in lunches too!

No Bake Pumpkin Date Bars

Ingredients
- 1 cup packed pitted Medjool dates
- 1 cup raw walnuts
- 1/4 cup pumpkin purée
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 2 tsp pumpkin pie spice
- 1/4 tsp salt
- 1/4 cup coconut butter
- 1/4 cup walnuts, chopped
Instructions
- In a food processor, blend dates till completely smooth. Transfer dates to a bowl.
- In the empty food processor, add walnuts, pumpkin purée, almond flour, coconut flour, pumpkin pie spice and salt. Blend until a fine meal is achieved.
- Add dates back to the food processor. Blend till a dough forms.
- Line a 9×5 inch loaf with parchment paper. Using your hands, press dough firmly and evenly into the pan.
- Melt coconut butter in a saucepan over low heat. Spread over date mixture. Top with chopped walnuts.
- Freeze 20 minutes or until set. Remove load from pan, holding onto edges of parchment for easy removal. Using a sharp knife, slice into 8 squares. Store leftovers in the fridge.
