Chocolate and banana anything gets me every time. Living up to their name, these muffins are extra fudgy and full of delicious chocolatey flavor.
My only complaint about these muffins? They are hard to stop eating! 🙂

Extra Fudgy Banana Muffins

Ingredients
- 1 ripe mashed banana (1/2 cup)
- 1 egg, at room temperature
- 2 TB coconut sugar
- 1 TB melted coconut oil
- 1 cup almond flour
- 2 TB coconut flour
- 2 TB cacao powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup chocolate chips
Instructions
- Preheat oven to 350.
- In a large bowl, combine banana, egg, coconut sugar and coconut oil.
- In another bowl, whisk together almond flour, coconut flour, cacao powder, baking soda and salt.
- Add dry to wet and stir to combine. Stir in chocolate chips.
- Grease 8 muffin cups. Divide batter between cups and sprinkle with extra chocolate chips if desired.
- Bake for 25 minutes, or until a toothpick comes out clean.
- Let cool on wire rack. Store leftovers in the fridge.
