Looking for something sweet to go with your coffee, but don’t want to make an entire cake? I totally know the feeling!
This mini pecan coffee cake is seriously so delicious. Not to mention, it’s gluten free, paleo and refined sugar free.
I’m very into the single serve desserts lately with no plans to stop soon! Let me know if you give this one a try 🙂

Ingredients
- 1 egg, at room temperature
- 2 TB coconut sugar
- 1 tsp melted coconut oil
- 1/2 tsp vanilla extract
- 1/4 cup almond flour
- 1 TB coconut flour
- 1/4 tsp baking soda
- 2 TB pecans (plus more for sprinkling on top)
Instructions
- Preheat oven to 350.
- In a small bowl, combine egg, coconut sugar, coconut oil and vanilla extract.
- In another bowl, whisk together almond flour, coconut flour, baking soda and salt.
- Add dry ingredients to wet and stir.
- Stir in pecans. Sprinkle extra on top if desired.
- Grease a 6 oz ramekin with coconut oil.
- Bake for 20 minutes. Serve warm.
