Gingerbread spice and everything nice…these blondies are it! Chewy and sweet and spicy and perfect for any holiday gathering. All you need is a bowl and a spoon, no mixer required! These are super easy and a guaranteed crowd pleaser. Not to mention, they are gluten free, dairy free and refined sugar free.
For an extra touch, I like to sprinkle a little powdered sugar on top. 🙂

Gingerbread Blondies
Ingredients
- Wet ingredients
- 1/2 cup creamy almond butter
- 1/2 cup coconut sugar
- 1 egg (at room temperature)
- 1 TB molasses
- 1/4 cup melted coconut oil or avocado oil
- Dry ingredients
- 2/3 cup almond flour
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 350. Line a 9×5 inch loaf pan with parchment paper and grease with a cooking spray or coconut oil.
- In a large bowl, combine wet ingredients.
- In another bowl, combine dry ingredients.
- Add dry to wet and stir to combine.
- Pour batter into prepared pan, press down with fingers.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool completely on wire rack. Remove loaf from pan and cut into squares.
