I know I’ve said it before and I’ll say it again – if you haven’t baked with chickpeas yet, you’re missing out!
It may sound weird, but chickpeas provide an amazing fudgey texture and you can’t even taste them! The only problem with making chickpea cookie dough is it’s hard to not eat all the batter before baking 🙂

Chickpea Cookie Dough Bars

* I like peanut butters that only have one or two ingredients: peanuts and/or peanuts and salt. (Crazy Richard’s and Costco peanut butter are my favorites.)
**I have used 1/3 maple syrup as well – it all depends how sweet you like your desserts!
Ingredients
- 1 can chickpeas, rinsed and drained
- 1/2 cup creamy peanut butter*
- 1/2 cup pure maple syrup**
- 1 tsp vanilla extract
- 1/2 tsp each: baking soda & baking powder
- 1/4 tsp salt (only if PB is unsalted!)
- 1/2 cup chocolate chips, plus more for sprinkling on top
Instructions
- In a food processor, add all ingredients except chocolate chips. Blend till completely smooth.
- Transfer batter to a bowl, stir in chocolate chips.
- Grease a loaf pan and line with parchment paper. Pour batter in. Dough will be sticky! Wet your fingers with water to press dough into an even layer.
- Sprinkle with extra chocolate chips.
- Bake at 350 for 25 minutes.
- Cool in pan on wire rack. Cut into 8 squares. Enjoy!
